Banana Cacao Chia Seed Pudding Recipe

Ingredients
- 2 Ripe Bananas, the riper the better
- 1/2 Cup Chia Seeds
- 2 Cups Milk of your choice
- 1/2 tsp Vanilla Extract
- 1–2 Tbsp Sweetener of your choice (optional; raw honey recommended)
- 1 Tbsp Cacao Powder
- 2 Tbsp Cacao Nibs for topping
Instructions
- Peel one banana and place it in a bowl with the chia seeds. Mash together with a fork until well combined into a thick, mushy paste.
- Add the vanilla extract and milk, stirring until the mixture is smooth and lumps are gone.
- Divide the chia mixture in half. Cover one portion and refrigerate.
- To the remaining half, add the sweetener (if using) and cacao powder. Mix thoroughly, then cover and refrigerate overnight or until set.
- To assemble the parfaits, layer the cacao chia pudding in the bottom third of your glass, add the plain banana chia in the middle third (press banana slices against the glass if you like), and finish with another layer of cacao chia. Top with extra banana slices and cacao nibs.
