If you’ve followed my recipes, you know I love bacon. It elevates everything, and this dip is no exception. Rich, creamy, and full of texture, it’s the kind of appetizer that disappears fast at parties. Make it ahead, pop it in the oven when guests arrive, and serve hot for best results.

This dip is flexible: fresh, frozen, or canned corn all work well. I prepare it in an 8-inch skillet, but you can double or triple the amounts for a larger crowd. It reheats nicely and the jalapeno adds just enough heat to balance the creamy cheese and salty bacon.

Ingredients
- 8 strips bacon chopped
- 2 cups corn
- 1 jalapeno seeds removed, chopped
- 1 cup cream cheese
- 3/4 cup shredded cheddar or mozzarella cheese divided
- 2 tbsp milk
- salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Heat a cast-iron skillet or oven-safe pan and cook the bacon until crisp.

Remove the bacon with a slotted spoon to a bowl. Pour off the bacon fat but leave the skillet unwashed to keep some flavor.

In the bowl with the bacon, add corn, chopped jalapeno, cream cheese, milk, and most of the shredded cheese. Reserve about 1/4 cup cheese and a bit of bacon for the topping. Season with salt and pepper and mix until combined.

Transfer the mixture back into the skillet, sprinkle the reserved cheese and bacon on top.

Bake for about 15 minutes, or until the cheese is melted and beginning to brown. Serve hot with chips, crackers, or toasted bread.
