Ingredients

  

  • 2 ½ cups cornflakes , crushed
  • ½ cup whole grain flour
  • 1 lb chicken fillet (skinless, boneless chicken-breast halves)
  • 2 eggs
  • ½ teaspoon salt
  • 2 teaspoons garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon cayenne pepper

For the Honey Dijon Sauce

  • 4 tablespoons Dijon mustard
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon apple cider vinegar or lemon juice

Instructions

 

  • Set up three bowls: flour in the first, beaten eggs in the second and in the third combine crushed cornflakes, garlic powder, paprika and cayenne.
  • Cut chicken fillet into thin strips and season with salt.
  • Dip each strip into flour, then egg, and finally press into the cornflake mixture to coat evenly.
  • Preheat the oven to 400°F (200°C) and line a baking pan with parchment paper.
  • Arrange the coated chicken strips on the pan and bake for 20 minutes, or until golden and cooked through.

  • To make the Honey Dijon sauce: whisk together Dijon mustard, honey, olive oil and apple cider vinegar until smooth.
