Gnosis Chocolate NYC: Natural Bean-to-Bar Chocolates Reviewed

Just before leaving the show, I had the pleasure of meeting Vanessa Barg, the founder of Gnosis Chocolate. Vanessa is an impressive chocolatier and an inspiring example of classic American entrepreneurship. Her approach demonstrates that exceptional chocolate can be created without relying on common additives, focusing instead on quality cacao and natural ingredients.

Gnosis Chocolate offers products that are organic, vegan, kosher, sugar-free, gluten-free, dairy-free, and soy-free. At first I was skeptical—many of us assume that sugar, dairy, or other ingredients are essential to good chocolate—but Vanessa and her team have proven otherwise. Their cacao bars rely on excellent cacao and thoughtful natural additions, delivering clean, authentic flavor without compromising texture or richness.

They currently produce roughly 20 different cacao bars. I sampled several varieties and found each to be fresh and well-balanced. The flavor profiles were true to the cacao, with clear notes that felt crafted rather than masked by sweeteners or emulsifiers. For anyone looking for healthier chocolate options that still satisfy a chocolate craving, Gnosis makes a compelling case.
