This bright tomato salad combines ripe tomatoes, capers and feta with a lemony herb vinaigrette for a fresh, Mediterranean-inspired side.

Ingredients
- 1 lemon, zest and juice only
- 1 shallot, finely chopped
- 1/2 clove garlic, minced
- 1 tbsp fresh oregano, chopped
- 20g / 1/2 cup fresh parsley, chopped
- 60ml / 1/4 cup olive oil
- Salt, to taste
- 5 medium red and yellow tomatoes, cut into wedges
- 3–4 red and yellow cherry tomatoes, halved
- 3 tbsp capers
- 75g / 1/2 cup feta cheese, crumbled
Instructions
- In a large bowl, combine lemon zest and juice with finely chopped shallot, minced garlic, chopped parsley and oregano, and a pinch of salt.
- Add the tomato wedges and halved cherry tomatoes, capers and crumbled feta. Toss gently to combine and season with additional salt if needed.
- Let the salad sit for about 20 minutes to allow the flavours to meld before serving.
