Years later I tried steamed green beans with butter and changed my opinion entirely. Since then I’ve enjoyed many variations, but the bacon-and-mushroom version remains my top pick.

This recipe keeps things simple: the beans are steamed in the Instant Pot, then combined with crisped bacon, butter, garlic, and sautéed mushrooms finished with a splash of coconut aminos or tamari for a rich, umami flavor.
Tip: Use fresh green beans trimmed and cleaned for the best texture. French green beans work well too.

Ingredients
- 1 lb fresh green beans, cleaned and trimmed
- 3 tablespoons butter
- 1 clove garlic, minced
- 1 ½ cups sliced mushrooms
- 2 teaspoons coconut aminos or tamari sauce
- ⅛ teaspoon black pepper
- 4 slices bacon, chopped
Instructions
- Place the green beans directly into the Instant Pot inner pot and add enough water to just cover them.
- Close and lock the lid, set the pressure release to Sealing. Select Steam on High Pressure for 2 minutes.
- When cooking completes, carefully perform a Quick Release to release all pressure.
- Open the lid, remove and drain the green beans. Dump the remaining water from the inner pot and dry it, then return the inner pot to the Instant Pot.
- Set the Instant Pot to Sauté (High). Add the chopped bacon and sauté until it begins to crisp.
- Add butter, minced garlic, and sliced mushrooms. Sauté about 2 minutes until mushrooms soften and begin to shrink.
- Stir in the coconut aminos or tamari and cook for about 1 minute so the mushrooms absorb the sauce.
- Add the drained green beans to the pot and toss to coat with the mushrooms and sauce for about a minute.
- Remove from the pot, plate, sprinkle with black pepper, and serve.
