Monday Meal Plan — August 11, 2009 Meals & Recipes

Yes, it’s Menu Plan Monday—on a Tuesday. I’m starting a new, slightly offbeat tradition. With so much going on lately, this week’s menu focuses on easy, low-heat meals that won’t warm up the house. I actually had to turn on the air conditioning on Saturday—only the second time all summer—so I won’t complain too loudly.

First, a quick review of a dish I tried two weeks ago:

There was only one new recipe that week, but it deserves a mention: Orange-Apricot Pork Chops in the CrockPot. They turned out very well—super moist and not overcooked. The prep was simple: I combined the ingredients the night before and dumped everything into the slow cooker the next day. The whole family enjoyed it, so it was a definite win.

And now for this week’s menu:

Tuesday: Easily Stuffed Manicotti — I haven’t made this in a long time, but after eating a Lean Cuisine manicotti for lunch recently, I felt inspired. The kid will likely approve—pasta and cheese are her favorites.

Wednesday: Tacos — I missed making tacos two weeks ago, so I’m looking forward to this one. The sour cream will be a welcome addition, though the tacos themselves are always a hit.

Thursday: Tater Tot Casserole — I don’t think I’ve ever made this one, but my mom suggested it when we talked about the child’s new obsession with tater tots. I remember her making it for my sister and me growing up. Andy loves tater tots; I’m less enthusiastic, but I’m willing to give this casserole a try.

Friday: Leftovers.

I usually leave the weekend unplanned because our plans can change. Next step: make a grocery list and get ready for the week.
