Ingredients
- ½ cup peanut butter
- 3 tablespoons butter, softened
- ⅓ cup honey
- 1 teaspoon vanilla
- 2 eggs
- ¼ cup ground flaxseed
- 2 cup oats
- 2 teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup nuts, chopped (walnuts suggested)
- ½ cup craisins
Instructions
- Preheat the oven to 350°F (175°C).
- In a stand mixer (or a large bowl) combine the butter, peanut butter and honey. Mix until smooth.
- Add vanilla and eggs, mixing until fully incorporated.
- Stir in ground flaxseed, oats, cinnamon and salt. The mixture will be very thick.
- Fold in the chopped nuts and craisins until evenly distributed.
- Drop large spoonfuls (about 1/4 cup unpacked) onto a parchment-lined baking sheet. These will not spread much.
- Bake 8–10 minutes, until edges are set. Allow to cool on the pan for a few minutes before transferring to a rack.
Notes
- Substitute walnuts with almonds or omit nuts if preferred.
- Try different dried fruit like dried blueberries or cherries for variety.
