You’ll love this pumpkin snack: soft and indulgent!
All jokes aside, pumpkin is incredibly versatile and worth experimenting with in both sweet and savory dishes. It was my first time making pumpkin fudge, and I fell in love with the first bite. I wasn’t sure how it would turn out, but it ended up being very easy to make — you can even taste the mixture raw — and so good that I ate two pieces while taking photos.
Oh — I just remembered I still have a few pieces in the freezer. *snack break*

Pumpkin and chocolate fudge is perfect when you want something healthy but quick!
The pumpkin snack your fridge was missing…
I’m pretty sure this is what your fridge has been waiting for. If you love quick, healthy snacks like I do, you’ll fall for this one. It takes 5 minutes to prepare (plus resting time) and uses just 4 main ingredients (plus a pinch of salt). You’ll probably spend more time reading this post than making the fudge.
Note: desiccated coconut flour is essential here. It gives a delicate, unique flavor and texture — other flours won’t produce the same result and may make the mixture too dry or grainy.

FUDGE CON ZUCCA E CIOCCOLATO

Ingredienti
- 150 gr Pumpkin purée
- 70 gr Almond butter
- a pinch Salt
- 25 gr Coconut flour (fine, NOT shredded coconut)
- Optional: sweetener of your choice
- 40 gr Dark chocolate
Instructions

Line a small 8 x 15 cm loaf pan with parchment paper.

In a bowl, combine all ingredients except the chocolate. You can add a sweetener if you like.

The mixture should be neither too firm nor too runny. Adjust with more coconut flour if needed.

Press the mixture into the pan and chill in the fridge for 10 minutes.

Meanwhile, melt the chocolate, let it cool slightly, then pour it over the fudge. Sprinkle a pinch of flaky salt if desired.

Let it set in the fridge. When ready to serve, cut into small squares.
