Ingredients

2 Tbsp olive oil
5 medium red or yellow potatoes, cut into chunks
3 chicken sausages or bratwursts, sliced
1 medium yellow onion, sliced
2 cups kale, roughly chopped
1 tsp sea salt
½ tsp coarse ground black pepper
½ tsp garlic powder
½ tsp dried oregano

Instructions

Heat a large skillet over medium heat and add the olive oil. When the oil is hot, add the potato chunks and sliced sausages. Brown them, stirring occasionally so the potatoes form a golden crust on the outside and the sausage browns evenly.

When the potatoes start to become tender, add the sliced onion. Continue to cook until the onion becomes translucent and the sausages are cooked through, about 5–8 minutes depending on thickness.

Stir in the chopped kale, sea salt, black pepper, garlic powder, and dried oregano. Toss or stir to combine and cook just until the kale wilts and tenderizes, about 2–4 minutes.

Remove the skillet from the heat and serve immediately while hot.
