Slow Cooker Salsa Chicken Chili

Ingredients
- 2–3 boneless skinless chicken breast halves
- 28 ounces black beans, undrained
- 14.5 ounces pinto beans, undrained
- 2 cups jarred salsa
- 1/4 cup taco seasoning
- 14.5 ounces canned corn, drained
- 1/2 cup fresh cilantro, chopped
- 1 fresh lime, juiced
- 1 tablespoon masa harina (corn flour), optional
Instructions

Place the chicken, both cans of beans (undrained), salsa, drained corn, and taco seasoning in the slow cooker. Stir to combine and cook on HIGH for 4 hours.

Remove the chicken, shred it with two forks, and return the shredded chicken to the slow cooker.

If you’d like a thicker chili, stir in 1 tablespoon masa harina, cover, and cook an additional 10 minutes.

Stir in the chopped cilantro and lime juice, taste and adjust seasonings, then serve topped with tortilla chips, shredded cheese, sour cream, and avocado if desired.
