Slow Cooker Salsa Chicken Chili

A simple, flavor-packed slow cooker chili with chicken, beans, corn, salsa, and bright cilantro and lime.

Ingredients

  • 2–3 boneless skinless chicken breast halves
  • 28 ounces black beans, undrained
  • 14.5 ounces pinto beans, undrained
  • 2 cups jarred salsa
  • 1/4 cup taco seasoning
  • 14.5 ounces canned corn, drained
  • 1/2 cup fresh cilantro, chopped
  • 1 fresh lime, juiced
  • 1 tablespoon masa harina (corn flour), optional

Instructions

  • Place the chicken, both cans of beans (undrained), salsa, drained corn, and taco seasoning in the slow cooker. Stir to combine and cook on HIGH for 4 hours.
  • Remove the chicken, shred it with two forks, and return the shredded chicken to the slow cooker.
  • If you’d like a thicker chili, stir in 1 tablespoon masa harina, cover, and cook an additional 10 minutes.
  • Stir in the chopped cilantro and lime juice, taste and adjust seasonings, then serve topped with tortilla chips, shredded cheese, sour cream, and avocado if desired.
