  • 1 heaping cup creamy peanut butter (don’t use natural or homemade)
  • 1/2 cup light corn syrup (light colored)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 3 1/2 cups corn flakes cereal

Chocolate-Peanut Butter Topping

  • 1/2 heaping cup semi-sweet chocolate chips, melted
  • 1/4 heaping cup creamy peanut butter, melted with the chocolate
  • 1/4 cup creamy peanut butter, for swirling on top

Instructions

  • Line an 8-inch square pan with foil leaving an overhang and spray lightly with cooking spray.
  • In a large microwave-safe bowl, combine the peanut butter, corn syrup, granulated sugar, and brown sugar. Heat on high for 1 minute to melt, then stir. Return to the microwave for 1 more minute if needed.
  • Stir in the vanilla, then fold in the corn flakes until evenly coated.
  • Press the mixture firmly into the prepared pan and smooth the top. Set aside.

Chocolate-Peanut Butter Topping

  • In a microwave-safe bowl combine the chocolate chips and the heaping 1/4 cup peanut butter. Heat on high for 1 minute, stir, then heat in 10–15 second bursts until smooth.
  • Pour the chocolate mixture over the pressed bars and smooth lightly.
  • Heat 1/4 cup peanut butter in a small bowl about 30 seconds until pourable. Drizzle evenly over the chocolate and swirl lightly with a toothpick or knife to create a marbled pattern.
  • Cover the pan with foil (to protect from fridge odors) and chill for at least 2–3 hours, or until the chocolate layer is fully set. Lift out using the foil overhang and slice to serve.
